St Patrick's Day is just a week away and although it is on a Sunday and drinking may not be as much of an option, it does give you plenty of time to make some recipes to celebrate! Of course my favourite meal for St Patrick's Day day is the classic corned beef and cabbage along with a pint of Irish ale or stout. Corned beef and cabbage is such and easy meal to make, especially in the slow cooker, and it never gets boring because you can dress it up with different glazes or gravies every time. My standard is a corned beef in an apricot glaze and I usually serve it with some colcannon along with sauteed cabbage with bacon and it is a fairly easy meal since the potatoes and cabbage get cooked in the slow cooker along with the corned beef. I always like to get a large corned beef to ensure leftovers as I have a lot of tasty recipes that call for corned beef including a few that incorporate kimchi for the adventurous among you. If corned beef is not your thing there are plenty of other options including things like stews, quiches and even desserts! Guinness is one of the popular drinks of choice for St Patrick's Day and it goes surprisingly well with chocolate, bringing out and enhancing the chocolate flavour!
