One of the best arts of summer is grilling! It’s so easy to season or marinate some meat and then throw it onto the grill for a quick, easy and tasty meal! This balsamic grilled chicken with avocado and tomatoes is a great option! Chicken is marinated in a balsamic vinaigrette, grilled and topped with fresh mozzarella that’s allowed to melt before being served with fresh avocado and tomatoes! You can serve this chicken as a mian with sides or you can throw it into a bun for a sandwich or into a salad!
Balsamic Grilled Chicken with Avocado
A simple grilled chicken that’s marinated in balsamic vinaigrette, topped with melted cheese, avocado, tomato, and basil!
ingredients
- 1 pound boneless skinless chicken breasts or thighs, pounded thin
- 1/4 cup balsamic vinaigrette
- 8 ounce fresh mozzarella ball, sliced (or 1 cup shredded mozzarella)
- 1 large avocado, sliced or diced
- 1 cup tomato, diced
- 2 tablespoons basil, sliced
directions
- Marinate the chicken in the balsamic vinaigrette for 20 minutes to overnight.
- Shake off the excess marinade and grill (or pan fry) over medium-high heat until cooked through, about 3-5 minutes per side.
- Place the cheese on top of the chicken and let it melt.
- Enjoy the grilled chicken topped with avocado, tomato, and basil.
Option: Add crumbled bacon!
Option: Enjoy as a sandwich in a bun!

I usually find your recipes good, but this was bleh. This dish had no flavor whatsoever, no spices, no seasoning. Just melted bland cheese over a bland chicken breast. Even tasty fresh tomatoes could not save it.
