Pico de Gallo

Pico de Gallo

Pico de gallo is a condiment like a salsa that is made with fresh chopped tomatoes, onions and chilies. It can be used just like a salsa for dipping tortilla chips into or as a side dish or a condiment. One advantage that it has over salsas is that there is less liquid and that makes it a perfect filling for tacos and burritos etc. The thing that I like most about pico de gallo is that it is nice and fresh and it brightens up almost any meal. To maximize the freshness I typically make the pico de gallo just before I use it. It is also really quick and easy to make, a real winning combo in my books! This recipe is really loose given that I normally just throw it together with what I have on hand. I do like to throw some extras in like lime juice and cilantro to brighten things up a bit. I recently made some pico de gallo to go with the carnitas that I made.

The colors here really pop. I add pico to sweet potato salsa and it takes it to another level. I've started to use pickled jalapenos in all my salsas. It's the only way I get consistent heat. Those in my market range from bland to fiery.

When you find out how easy it is to make this stuff you wonder why people ever buy it. I like the way you post what it goes with.

I like the recipe, but I'll disagree on one point. IMO, pico de gallo ages well, and after 2 days in a refrigerator, the flavor maximizes.

I love pico de gallo too. In Mexico, it is usually prepared 2 days in advance before using it so all the flavors come together like a marinade. My dad's Mexican and I learned a thing or two from that side of the family. :)

Sometimes just the simplest is the best. I India, we would this exact same thing, by the name of salad almost everyday with meals. Fresh & cocorful - nice reflection of spring!

I love pico but haven't ever been brave enough to try making it. This will definitely be on my list when I can get fresh tomatoes again!

TexasWahine said...

please also try it with a bit of ground cumin! It adds a bit of something that I can't do without. I like to use some pico with either chunky chopped or mashed avocado for a quick guacamole. YUM!
