Pico de gallo (aka salsa fresca, aka salsa cruda) is a Mexican salsa that is made with fresh chopped tomatoes, onions and chilies. This salsa is so bright, fresh and packed with flavour and it only takes 10 minutes to make! You can use pico de gallo like any other salsa so it’s great in tacos, quesadillas, burritos, nachos, etc along with simply dipping tortilla chips into! Pico de Gallo
A quick and easy fresh chopped tomato salsa that is so very hard to resist!
ingredients
- 2 cups tomatoes, seeded and diced
- 1/4 cup onion, diced
- 1 jalapeno, seeded and diced
- 1 handful cilantro, chopped
- 1 lime, juice
- salt to taste
directions
- Mix everything.
Note: A nice balance between the lime juice and the salt really makes a pico de gallo shine, so add the salt a bit at a time to get it to where you want it!
Option: Let the salad sit for 10-20 minutes before digging in, to let the flavours come out!

The colors here really pop. I add pico to sweet potato salsa and it takes it to another level. I’ve started to use pickled jalapenos in all my salsas. It’s the only way I get consistent heat. Those in my market range from bland to fiery.

I like the recipe, but I’ll disagree on one point. IMO, pico de gallo ages well, and after 2 days in a refrigerator, the flavor maximizes.

I love pico de gallo too. In Mexico, it is usually prepared 2 days in advance before using it so all the flavors come together like a marinade. My dad’s Mexican and I learned a thing or two from that side of the family. 🙂

please also try it with a bit of ground cumin! It adds a bit of something that I can’t do without. I like to use some pico with either chunky chopped or mashed avocado for a quick guacamole. YUM!
