Fall is officially here and that means that it is the perfect time to pull out some of my favourite fall recipes! During fall there is still plenty of amazing fresh produce around from apples to pears, pumpkins and other winter squash, brussels sprouts, cabbage, cauliflower, etc. and there are just so many great ways to enjoy them! The cooling weather also opens up new opportunities like using the oven for things like roasts and casseroles which may have been taboo during hot summer days. Of course as the weather gets even cooler soups and stews make a more prominent appearance on the table along with other comfort foods like pasta! Me again. In the fridge the last of the garden tomatoes, a nice bunch of chard, and some brown mushrooms need to become dinner tonight. Your Caprese casserole looks like the ticket to use up all the fresh garden harvest stuff if teamed up with the power trio of peppers, onions, and garlic. Since gophers ate the garlic again, I had to buy some at Costco, but all the rest will come from the garden. And there seems to be a pasta shortage hereabouts, but I have a nice stash of penne, luckily. With a bottle of “Colossal”, (a really robust Portugese dark red table wine), a freshly baked loaf of homemade sourdough ciabatta, and a crunchy field green salad dinner should be splendid. Thanks again for making my meal planning a snap.
