Are you ready for a Meatless Monday? The idea is to eat one meal a week without meat. Now don’t get me wrong I could never give up things like BACON, steaks, burgers, etc. but I do find that I eat a lot of meatless meals and they are just as tasty and they are usually pretty healthy! We try to eat meatless at least 3 times a week, and yesterday we had your Black Bean and Quinoa Chili! I really loved it with a dollop of sour cream and fresh avocados and cilantro. Some dishes are so easy to make without meat like curries, pastas and casseroles. Tonight we'll have stuffed bell pepper, I'll see if I can find some inspiration for the stuffing in your recipe index.
